Chef Javi, the Food Truck Guy learned to cook on the streets, food stalls, and corners of South America at just 16 years old. What started as curiosity and hustle quickly turned into a lifelong passion.
His first role as Head Chef came at the sports bar chain Soccer Bar in South America. From there, he began a long journey through the culinary scenes of the United States. Along the way he worked in well-known restaurants such as Versailles, Victor’s Cafe, Blue Martini, and Bamboo, building a reputation for bold flavors and relentless work ethic. He also worked for Chipotle, before returning to what truly defined him, the streets and the energy of the food truck world.
With more than 35 years in the industry, Chef Javi is now the founder/owner of several recognized food truck brands such as Burro Grilled Cheese, Coat & Thai, and Black Bear Burgers, in addition to manufacturing food trucks. As a mentor who has helped more than 300 families launch their own food truck businesses.
