Eric Elenkiwich

Eric is a Food Truck Operator, who owns 7 food trucks with 4 different concepts. He's been in the restaurant business since the age of 15 and holds a B.S. and M.S. from South Dakota State University. Besides owning his trucks, Eric has taught full time at SDSU and has been an adjunct instructor for different hospitality classes.
